I talk a lot about food, nutrition, and especially paleo eating on FitViews. I believe that good nutrition is a must. Quality nutrition is essential to my family's overall well-being and that translates equally to my pets. To me, a good nutritional plan is built on an ancestral diet foundation. What they will naturally respond best to. 


My family eats paleo because I believe this is what our bodies thrive on, what we're meant to eat. I also believe my pets deserve a diet they will thrive on. For my cats this means a low carb, grain-free pet food. A pet food high in animal-based protein. A pet food that closely mimics my cat's ancestral diet.

If you've visited FitViews before you have probably noticed I'm rather fond of Jillian Michaels at-home workouts. I own virtually all she has and have reviewed many on this blog. They're just good, solid workouts that give me great results. 

I'm particularly fond of Jillian programs, calendars, and challenges. I've blogged through Body Revolution and BodyShred. I vlogged through the 30 Day Shred. Pretty much every Jillian challenge set forth I've delightedly owned.

But I'm feeling a bit "been there done that" lately. I want a new Jillian challenge. Something fresh, something challenging, something different. Something new to motivate me and push me. So, I decided to come up with my own! I'm calling it the #KillerJillian Challenge.

--I've designed the #KillerJillian Calendar to be 6 days of workouts from Jillian Michaels' "Killer" series with one rest day. That works for me. Feel free to adjust to suit your workout preferences. 

--The calendar progresses in difficulty each week. Again, use modifications shown in the workouts and adjust workout levels as needed. For example, if you're not ready to move to a harder workout, simply stay at level 1 longer.

When I first went paleo I was convinced I’d need to swear off desserts and baked goods forever. That was fine for my first 30 days of strict paleo. After that I found I wanted to be able to have something sweet once in a while, but without going completely non-paleo crazy. That's when I discovered paleo baking! Who knew?!

Paleo baking is using paleo-friendly ingredients to mimic common baked goods like breads, cookies, pies, etc.

First, I played around with the different paleo-friendly ‘flours’, sweeteners, and oils. Then, once I became comfortable with the basics, I set out to convert my favorite old family recipes to being paleo-friendly.

My dad's favorite pie is peach. He loves peach pie at the holidays. Any holiday! I have yet to perfect a paleo double crust pie, but I have gotten pretty good at crisps and cobblers.

This is my revamped version of old-fashioned peach cobbler…

Paleo Peach Cobbler

Paleo Peach Cobbler

Ingredients:


Filling

4 cups fresh peaches (pitted, peeled, and sliced) Yes, can be replaced with frozen peaches, thawed, out of season.

Topping

1 ½ cups Raw Almond Flour
1 teaspoon aluminum-free baking powder
Pinch of SeaSalt
¼ cup OrganicExtra Virgin Coconut Oil, gently melted

Directions:


Preheat your oven to 350 degrees.

Lightly grease a 2 ½ quart baking dish with coconut oil. Sprinkle the cinnamon over the peaches and toss. Add mixture to baking dish.

In a separate bowl, add the topping ingredients and mix well with a fork. Spread topping over the top of peaches. I find it works best to do a scoopful at a time with my hands.

Bake for 40 minutes or until golden brown and a toothpick inserted into just the crust comes out clean.

Growing up the only encounter I had with sweet potatoes was at Thanksgiving dinner. I hesitate to even call them sweet potatoes though. They were more like sugar coated sugar, with a side of sugar. Seriously!

The recipe was to coat a baking dish in margarine, add diced sweet potatoes, top with more margarine and a healthy heaping of brown sugar. Bake. And then? At the end you top the whole thing with a bag of marshmallows and bake again.

Blech! Needless to say I was never fond of sweet potatoes.

When I first went paleo I decided to reacquaint myself with sweet potatoes. They’re a great paleo-friendly carb source. I must confess the thought made me shudder, but I persevered. I tried them simple. Baked. I was so shocked. They're so good!

Now, I love sweet potatoes. They’re a go-to side dish for family dinners. Not only are they delicious, but they’re good for us and easy to make. The funny thing about sweet potatoes is they taste amazing all on their own. When it comes to sweet potato recipes, simple is best.

Now, I bring this to Thanksgiving…

Easy Paleo Mashed Sweet Potatoes


Easy Paleo Mashed Sweet Potatoes

Ingredients

5 large sweet potatoes
¼ teaspoon Ground Nutmeg


Sweet Potatoes


Directions


Preheat your oven to 425 degrees. Wash the sweet potatoes and prick them with a fork. Bake on a cookie sheet or straight on the oven rack for 60 to 75 minutes (45 to 60 for small to medium sweet potatoes). Check for doneness with a fork.


Baked Sweet Potato


Remove the sweet potatoes from the oven and scoop the insides into a mixing bowl (careful they will be hot!). Discard the peels. Use your hand mixer to blend in the remaining ingredients and serve!

This recipe serves my family perfectly. I double it to take to Thanksgiving dinner.

Hot Cocoa Low Carb Pancakes

Hot Cocoa Pancake Recipe

OK, I know I've been on quite the low carb pancake tangent lately, but THESE! Seriously, these are yummtastic. Yummazing? Ya, they're really good. They just might be my favorite recipe I've ever done. Ever. OK, that might be my paleo apple crisp recipe, but that's not low carb...ooo, I wonder if I could tweak that low carb...

That would be brilliant!

You know, bloggers area always talking seo this and seo that (seo stands for search engine optimization if you're not a blogger) and I'm just over here yammering. I'm pretty sure when google's spider crawlers (anyone shiver at that word picture? eesh) get to FitViews they just think, "Yeesh, this person was drunk when they wrote this," and move on. Ha ha ha!

Anyway, pancakes. Hot Cocoa Low Carb Pancakes no less. So good. 

Hot Cocoa Pancakes

As I've mentioned before I'm back to low carb and developing new recipes to make it easier to stick with. I find I just plain feel great when I eat lower carb, and I definitely have better progress with weight loss when I eat this way. I admit it can be a challenge to stick with, but with these pancakes? Who can feel deprived? Not me. YUM.

Whether you're seriously bored on your egg fast or just a low carb or keto style eater these Hot Cocoa Low Carb Pancakes are for you! With only 6 grams of carbs for the ENTIRE RECIPE (4 grams net carbs) they'll fit nicely in your plan. They're a quick and super easy breakfast option. Plus, yes, they're delicious! They really do taste like hot cocoa. I could really eat them every. single. day. Plus, they're oh so appropriate for this time of year. OK, who am I kidding, I will eat them year-round.

And? If eating these for lunch is wrong, I don't want to be right.

This recipe makes 3 or 4 decent sized pancakes and comes in at 360 calories according to my tracking in My Fitness Pal. I generally eat the whole thing and double the batch if hubby wants some too. It easily doubles or triples or quadruples...to feed however many you'd like. I love to make a giant batch on Sunday and have them ready for the week. Just reheat in the microwave and go.


Hot Cocoa Low Carb Pancakes

LOW CARB Hot Cocoa PANCAKES

For this recipe you'll need:


A mixing bowl (I like to use a large glass measuring cup to easily pour the batter in the skillet), a hand mixer, measuring spoons, and a small non-stick skillet (I love my Non-Stick Ceramic Skillet), and a spatula that won't scratchyour skillet.

Ingredients


2 Eggs
2 oz Cream cheese softened
1/2 tsp Vanilla
2 Packets stevia or other low carb sweetener (I used Truvia)
1 Tablespoon Cocoa Powder
Gheefor the skillet

Directions


Add all of the ingredients to your mixing bowl and blend well with your hand mixer on medium. The batter should be smooth with no bits of cream cheese visible (though I've been impatient and made them this way and it was fine, just with bits of cream cheese in the finished pancakes obviously). Preheat your small non-stick skillet to medium-low (3 on my stove top) and add a little ghee. Pour just enough batter into your skillet to cover the bottom. Wait until bubbles appear and pancake appears set. Flip. Cook until done, about 30-60 seconds.


Hot Chocolate Pancakes


Notes

The cream cheese will blend better if it is softened. You can either just let it sit on the counter for a bit or soften it in the microwave for 30ish seconds. Also, this batter will be very runny. 


Low Carb Hot Cocoa Pancakes

For a special treat serve them with a little heavy whipping cream.

These Hot Cocoa Low Carb Pancakes are seriously delicious, and an amazing option if you're tired of traditional low carb ways to have eggs. In describing them I'd say maybe a tad bit crepe-like in consistency. Definitely not the consistency of a traditional wheat flour pancake, but an amazing treat when you're egg-fasting, low carb, or keto!
